Vegetable Fritters

Crispy fritters packed with shredded veggies — a healthy appetizer or side dish.

Ingredients:

  • 2 cups shredded zucchini & carrots

  • ½ cup chopped spinach

  • ½ cup flour

  • 2 eggs

  • 1 teaspoon garlic powder

  • Salt & pepper to taste

  • Oil for frying

How to Make:

  1. Squeeze water out of zucchini & carrots.

  2. Mix with spinach, flour, eggs, garlic powder, salt & pepper.

  3. Heat oil in pan, spoon batter, flatten slightly.

  4. Fry 2–3 min each side until golden.
