Shawarma

 

Overview:

Shawarma is a popular Middle Eastern dish consisting of thinly sliced marinated meat, typically chicken, lamb, or beef, cooked on a rotating spit and served in a flatbread with vegetables and sauces.

Ingredients:

  • For the marinade:
    • 500g boneless chicken thighs or beef, thinly sliced
    • 3 tablespoons plain yogurt
    • 2 tablespoons olive oil
    • 1 tablespoon lemon juice
    • 2 garlic cloves, minced
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1/2 teaspoon paprika
    • 1/2 teaspoon turmeric
    • Salt and pepper to taste
  • For serving:
    • Pita bread or flatbread
    • Sliced tomatoes, cucumbers, and onions
    • Lettuce leaves
    • Garlic sauce or tahini sauce

How to Make It:

  1. Marinate the Meat: In a large bowl, mix yogurt, olive oil, lemon juice, minced garlic, and spices. Add the sliced meat, coating it well. Marinate for at least 2 hours, preferably overnight.
  2. Cook the Meat: Heat a grill or skillet over medium-high heat. Cook the marinated meat until fully cooked and slightly charred, about 6-8 minutes per side. Slice into thin strips.
  3. Assemble the Shawarma: Warm the pita or flatbread. Place the cooked meat in the center, then top with sliced vegetables and a drizzle of garlic or tahini sauce.
  4. Serve: Roll up the bread around the filling and serve immediately.
