Peking Duck




Overview: Peking Duck is a traditional Chinese dish known for its crispy skin and tender meat, served with hoisin sauce, pancakes, and sliced vegetables. It’s celebrated for its unique preparation and rich flavor.

Originates from: Beijing (formerly Peking), China, with a history dating back to the Yuan Dynasty (1271-1368).

Ingredients:

  • Whole duck
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon five-spice powder
  • Hoisin sauce
  • Cucumber (sliced)
  • Green onions (sliced)
  • Chinese pancakes or thin tortillas


How to make it:

  1. Prepare Duck: Clean and pat dry the duck. Mix honey, soy sauce, rice vinegar, and five-spice powder, then brush this mixture over the duck.
  2. Air-Dry Duck: Hang the duck in a cool, dry place or in the refrigerator for several hours or overnight to allow the skin to dry out.
  3. Roast Duck: Preheat oven to 375°F (190°C). Roast the duck on a rack in a roasting pan for about 1.5 hours, or until the skin is crispy and golden brown.
  4. Serve: Slice the duck into thin pieces. Serve with hoisin sauce, cucumber, green onions, and Chinese pancakes. To eat, spread hoisin sauce on a pancake, add duck slices, and top with cucumber and green onions, then roll up.
